Peanut Butter Cacao Muffins: Keto, Gluten Free, Low Carb

 


DRY INGREDIENTS

1 cub almond flour

2 tbsp coconut flour

1 pinch of pink Himalayan salt

2 tbsp cacao

1/3 cup powdered peanut butter

1/2 tsp Ceylon cinnamon

1/3 cup Lakanto Monkfruit sweetener

3 tsp baking powder

 

WET INGREDIENTS

1/2 cup oat milk

1/2 teaspoon vanilla

1 tbsp Bulletproof Brain Octane Oil or Coconut oil

2 eggs

Let batter sit for ten minutes

 

TOPPINGS

GO CRAZY!

I topped mine with Vegan Chocolate chips, Hemp seeds, and walnuts

 

Bake at 350F for 15-20 minutes for the muffins to rise and the muffin tops to brown.

-Makes 12 Muffins
